After many years as a vegetarian, Nancy read the powerful book, The China Study, by Cornell University’s chief nutritional researcher, T. Colin Campbell, who presented his findings on the link between diet and cancer.

Discovering that animal protein was the culprit, Campbell further identified “casein” which is the milk protein in dairy foods as a major contributor to cancer, stating that they could literally turn the cancer gene on and off by feeding casein to lab animals.

As a vegetarian, Nancy enjoyed eating dairy and eggs but after reading that book she vowed to turn vegan in honor of her dad who succumbed to cancer in December 2013. In August 2014, Nancy undertook a two week vegan chef school immersion with celebrity vegan chef Mark Reinfeld, author of numerous books on vegan and raw foods.

She learned the nuances of vegan cooking including how to make vegan soups, salads, salad dressings, grain and legume dishes, tofu, seitan, and tempeh dishes, sauces, casseroles, wraps, rolls, pates, dips, vegan desserts as well as the added bonus of learning the secrets of savory raw food preparation.

This is cleansing and healing food. Food is medicine and the diseases of modernity are intractable unless we start looking at the food we are putting into our body. A whole foods, plant based diet is the direction we are moving into at Yogaya Institute.

After holding a few hands on cooking classes at her home Nancy realized that vegan chef school alone didn’t prepare her for teaching others. She sought out the skills of Bay area-based, raw food chef and instructor Jenny Cornbleet for several months of private coaching in how to lead demonstration style cooking classes. After Nancy finishes her teacher training with Jenny the vegan cooking classes at Yogaya studio will resume.
